Tomato, Basil & Artichoke Picnic Sandwich

Turmeric provides it with an egg-like hue; vegan mayo adds richness and creaminess; chives, capers, and dill make it delightfully bright and salty. Sandwich it on slices of bread and top it off with freshly cut greens and onion pickles to make a delicious healthy meal.

What’s the best way to begin this sandwich! I am a fan of this sandwich because of the spiced tempeh filling and all the fresh vegetables. However, I think my favorite part is the spreads. The first is a lemony white bean spread, and another is made of sun-dried tomatoes. Both are rich and delicious taste in this dish.
Chickpea Salad Sandwich
My vegan spin on a French pan bagnat! It begins with a chickpea salad that resembles tuna composed of tahini Dijon lemon, mustard, and capers to give it a tangy taste. Then, I finish it off with crisp vegetables and olives, as well as basil and a good baguette.
